Our Blue Reserve Cheese is hand selected by Amish Artisans from our highest quality cheese and aged 120 days. The artisan looks for flavor that is clean and smooth. The blue-green solid vein is set off by the creamy background and displays a uniformity in taste and quality. The body is firm and the texture is semi-soft.
